Flavoured syrups are a simple way to customise coffee drinks and cater to a wide range of customer preferences. The key to great syrupy coffee is consistency, balance, and correct technique.
Here’s how to use syrups properly in barista-style drinks.
1) Use the Correct Syrup Amount
For a 12 oz cup, the standard recipe is:

2 pumps of syrup

7.5 ml per pump

15 ml total syrup
This provides balanced sweetness without overpowering the coffee.
2) Add Syrup Before the Espresso
Always add the syrup to the cup before brewing the espresso. Pulling the espresso directly onto the syrup helps it dissolve and mix evenly, preventing syrup from sitting at the bottom of the cup.
3) Adjust for Different Drinks

Lattes & cappuccinos: use the full two pumps

Flat whites: use one pump only, as these drinks are less milky and traditionally less sweet
