About the Farm
Since the end of the 18th century, farmers in this region have undergone tremendous human adaptation to difficult geographical conditions and through this have shaped the landscape in which natural, economic, and cultural elements are combined which is unique in the world.
The farm is situated on a land which has been declared an UNESCO World Heritage Site for being an exceptional example of a cultural, sustainable, and productive landscape.
In 1980, a young Bernardo decided to dabble with a new farm located in Santuario, also known as “The Tatamá Pearl” due to the rich biodiversity that is found within the Tatamá National Park, a vital natural gem that encompasses part of the city.
Bernardo Encheverry, is part of the 3rd generation of coffee producing family, owning the Finca La Estrella farm since the 1950s. We saw a certain synergy with Ringtons being another family business now in the 5th generation.
Initially, Bernardo’s farm was planted exclusively with Bourbon and Typica plants and the wet milling process was done in a traditional way. As the coffee industry began to evolve, Mr. Echeverry saw the need to improve his farming techniques by producing more high-quality coffee with an optimal cost of production.
Finca La Estrella is currently processing all the coffee cherries in a high-tech ecological mill that consumes significantly less water than the traditional system. We thought this was an outstanding step in coffee processing!
In addition to this, Mr. Encheverry and his family firmly believe is it imperative to share the knowledge with all producers to spread an economically viable production methodology that will preserve both their traditions and maintain their unique cup profile.
Purchasing from Bernardo gives us a unique genuine traceability, all the way back to farm level. Not always achievable, it’s a level of traceability that coffee roasters should be striving for.
