A great mocha balances rich chocolate with bold espresso, creating a drink that’s indulgent without being overpowering. While it shares similarities with hot chocolate, the key difference is how the chocolate is mixed.
Here’s how to make a perfectly balanced mocha.
1) Understand What a Mocha Is
A mocha is simply espresso combined with hot chocolate, topped with steamed milk. The chocolate should complement the coffee, not dominate it.
2) Measure the Chocolate Carefully
Add one level scoop of hot chocolate powder to the cup. Avoid using a heaped scoop – too much chocolate will overpower the espresso and make the drink overly sweet.
3) Pull the Espresso onto the Chocolate
Extract the espresso directly onto the chocolate powder. This replaces the hot water used in hot chocolate and creates a smooth chocolate–coffee paste.

4) Steam the Milk Like a Latte
Steam the milk in the same way as you would for a latte:

Fill the jug to just below the spout

Introduce air at the beginning

Heat to latte or cappuccino temperature
Because a mocha is coffee-based, the milk should not be as hot as hot chocolate milk.
5) Mix the Chocolate and Espresso Properly
Let the milk rest briefly. While it does, mix the espresso and chocolate together until smooth. A mini whisk is recommended, as it produces a silkier texture than a spoon.
Taking care at this stage greatly improves the quality of the final drink.
6) Recombine and Pour the Milk
Before pouring, gently swirl the milk jug to recombine the milk and foam. Then pour the milk into the cup, finishing the drink as you would a latte.
